Jamie's Chicken Tetrazzini - Recipe for Paula

Today was the second part of Gok's twice cooked pork - it was amazing, really moist and tasty, not difficult and just served with egg fried rice. The pic below is my version!

Quesadillas for Paula !

Paula has requested a recipe for Quesadilla - I'm not sure if this is authentic but basically I just get a flour tortilla, layer with ingredients of your choice:
Cheese, ham, chillis, tomatoes, prawns, mushrooms, onions, chicken, olives etc. etc.
Top with another tortilla and place in frying pan, turning until filling is hot and melted, cut into wedges and serve with salsa, soured cream.

Stock - Homemade or not?



I often make my own stock and do think it's worth it. Last weekend I made a Brown Chicken Stock from Heston Blumenthal's 'At Home' cookery book, not expensive, it is time consuming but probably the best stock I've made. If you can't be bothered I can recommend powdered stock concentrate from http://homechef.essentialcuisine.com/  . I was familiar with Essential Cuisine from working at a food manufacturing company last year and came across them again at the Good Food Show in Birmingham a few weeks ago. They are now supplying their stocks to retail customers via their website and selected Delis etc.Cost a little more than Oxo cubes but much better!

Yesterday's Recipe:




Haddock Gratin last night - always a good choice for a midweek meal and here's how to make it:
Halve some new potatoes, boil and place in bottom of gratin dish, cover with your choice of fish in bite size pieces, I use plain and undyed smoked haddock, cover all that with a cheesy sauce - dijon mustard adds a bit of extra flavour. Finish with breadcrumbs mixed with a bit of paprika and bake for 20 - 25 mins. Really quick, easy and tasty!

Tonight I cheated! Don't eat many ready meals or takeaways but have to confess to quite enjoying Morrisons Indian Take Away Meal for 2 - tonight's choice Chicken Tikka Masala and Chicken Jalfrezi served with Basmati Rice, Naan and Onion Bahji all for the great price of £5.00! :-)

Pescatori Pizza

My 1st attempt at pizza was mostly successful! Tasty topping of passata, prawns, mussels, anchovies, capers and mozarella and crispy edges,  but a bit of a soggy bottom, If anyone knows the solution to this problem please let me know!

Roast Chicken to die for!

So I finally tried Heston's Roast Chicken, was it worth it? YES! Takes a little more time but so moist and tasty. Even if I don't do the long slow cooking again I would definitely make the 'gravy'. Deglaze roasting tin with white wine, add good chicken stock, reduce then just before serving add Dijon mustard, tarragon & parsley.
